The establishment is owned and operated by Dessi Sarabosing, a well-known local businesswoman, and her brother, Boris Mitrev, who brings experience from the London food scene. The sibling duo aims to offer Irvine residents a dining experience rooted in family history and classic Italian culinary practices.
According to Dessi Sarabosing, the inspiration for Pasta Viva emerged from a shared upbringing in the restaurant industry. Both she and her brother grew up in Bulgaria, where they began working in their parents’ restaurant as their first employees. Despite initially planning a different career path, with Sarabosing spending two decades as a global corporate controller for Taco Bell, she ultimately developed a deep appreciation for the hospitality sector. This personal journey, combined with her brother’s background, now informs their new venture in Irvine.
Central to Pasta Viva’s culinary identity is its commitment to the cheese wheel tradition. This method, which involves finishing pasta dishes directly within a large wheel of cheese, is presented as a way to “preserve Italy’s greatest culinary tradition.” The restaurant owners note that the practice itself dates back approximately 900 years, originating with Italian monks. To maintain authenticity, Pasta Viva crafts its fresh pasta using specially sourced Italian flour and exclusively utilizes authentic Parmigiano-Reggiano cheese in its preparations. This focus intends to deliver a distinct and historically resonant flavor to its patrons.
The restaurant aims to provide an elevated experience that remains approachable. Sarabosing clarified that Pasta Viva is “not white-glove service,” intending to offer an atmosphere that is welcoming rather than overly formal. The menu reflects this philosophy, with signature dishes described as “expressive, not expensive.” Among the notable selections for diners are creations named The Godfather, the Gladiator, and the Dreamer. Beyond its savory offerings, Pasta Viva also presents a distinctive dessert option: chocolate pasta.
