Redstraw Tea Bar in Cypress Village Shopping Center operates as a family-run business, with Irvine residents Eunyoun Seo and Ki Lee overseeing operations. Their son, Ian Lee, also works at the location, contributing to a staff that includes 12 other employees.
Eunyoun Seo previously managed a Redstraw location on Jeffrey Road for several years before taking over the Cypress Village franchise as its owner. Her husband, Ki Lee, manages the financial aspects of the business. This family involvement, including their son working part-time, helps shape the atmosphere for customers.
The staff members, known as "tea artists," are noted for building connections with regular patrons. Ian Lee stated that some customers do not need to order, as their preferred drinks are often prepared as soon as they arrive. "Redstraw is special because of the connection," Ian Lee remarked, highlighting how staff often know customer orders.
Ian Lee emphasizes his parents' dedication to the business, stating that they consistently prioritize operations and commit significant personal time due to their care for the establishment. Ki Lee acknowledged the challenges of operating a business but stated he values the opportunity to connect with individuals and contribute to the Irvine community.
A defining characteristic of Redstraw Tea Bar, according to Ki Lee, is its custom tea selection. Customers can choose from a variety of black, green, oolong, and herbal teas, including several caffeine-free options. After selecting their tea base, patrons specify their desired sweetness level. The shop uses premium cane sugar to sweeten its beverages.
Ingredient sourcing is also a focus, with ceremonial-grade matcha brought in directly from Kagoshima, Japan. Ki Lee noted that customers appreciate the "natural flavor" of the teas and other drinks.
The menu aims to cater to a broad demographic, offering options suitable for both children and grandparents. Popular selections include tea-based drinks such as the Mango Mojito and Peach Bellini. The Redstraw Milk Tea is a signature item, and on warmer days, the Island Glow smoothie is a frequently chosen beverage.
Ki Lee also shared his family's positive view of Irvine, describing it as "one of the safest cities and one of the best for education." He further affirmed their affection for the city, stating, "We just love Irvine."
